Every roll is cut to order in an open sushi kitchen you can watch from your seat, alongside steaming bowls of ramen, bao buns, crisp tempura, handmade spiced pork gyoza, sushi and sashimi sharing platters, seasonal specials and A5 grade Japanese wagyu. Hand-painted murals by artist Martyna Sabadasz, created specifically for this site, tell Birmingham’s own story on the walls, alongside digital animation, neon kanji and a basement of plush booths.
