The first evidence of an inn at the site dates back to 1642 but the surrounding area of Seasalter was entered in the Domesday Book as belonging to the kitchens of Canterbury Cathedral. Even then it was an area of food production, farmed by the monks, supplying produce for the influx of religious tourists after the murder of Thomas Beckett in 1170.

We took over The Sportsman in November 1999 with the intention of serving good food in relaxed and informal surroundings. We have held a Michelin star since 2008.

Following the monks’ example we let the area around the pub dictate what we cook. Behind us, the Thames Estuary, leading out to the North Sea, provides oysters and fish, and in front, marshland, woods and fertile soils give us meat, vegetables and game. We also grow some ingredients ourselves. A small kitchen garden and now polytunnels, mean we can cook with fruit and vegetables that benefit from being picked only moments before use.

The Sportsman is a wonderful place, it has such a nice vibe, very chilled, the focus is all on the food; which is absolutely delicious! My highlights were the chicken dish with truffle sauce and an apricot pork stuffing, and the little bonus dessert amuse bouche of a lemon verbena pannacotta. It's absolutely great value, and an unbeatable place to eat.

This is my absolute favourite restaurant, hands down! We went last night to mark 1 year until our wedding and everything was, as always, perfect! If you can go whilst the summer menu is on I’d highly recommend the chalk stream trout with sorrel sauce, and the raspberry soufflé! As a nut allergy sufferer I’m always a bit nervous about tasting menus but they could not have been more accommodating!

We have been several times over the years and this was just a good as we remembered. Great food with very refined and distinct flavours. Would be very hard to pick a favourite dish. The amuse-bouches were a nice surprise and delightful. Loved the menu choices but would be happy to see a return of the tasting menu. And also the meal was such good value in quality and quantity, so that visiting again doesn’t have to be just a special occasion.
