Tucked into Vancouver's Mount Pleasant neighbourhood, SUYO is Chef Ricardo Valverde's tribute to the country he left as a teenager. Since opening in 2022, it's earned Vancouver Magazine's Best New Restaurant and Best Latin American Restaurant, a spot in the MICHELIN Guide with the Exceptional Cocktails Award, and an EnRoute Canada's Best New Restaurants finalist nod. The name means "homeland," and every plate carries that intention: ceviches and tiraditos built on B.C. seafood, causa layered with Peru's ancestral potatoes, and a ribeye finished with chimichurri that regulars keep coming back for. Cocktails lean into Peruvian classics — Pisco Sour, Chilcano — alongside originals inspired by the Amazon and Andes. The room has been called a "walnut jungle," warm wood and greenery softening concrete and low lighting. From the team behind Michelin-recommended SUYO, Chef Ricardo Valverde brings the "coastal soul" of Peru to Vancouver's historic Chinatown. UCHU is Canada's first true Peruvian cevicheria — a raw bar-driven menu of vibrant ceviches, delicate tiraditos, and Nikkei-style sushi, where Peru's coastal traditions meet the Chinese and Japanese influences that shaped both the cuisine and the neighbourhood.
