Singel 101 is run by two sisters — one is the front-of-house heart of the place, the other shapes what comes out of the kitchen — and together they've built a restaurant around a simple idea: hospitality should feel personal, not performed. Set inside a historic 17th-century canal house in the heart of Amsterdam, the space is warm, characterful, and a little unpredictable in the best way, with a menu that shifts based on what's genuinely good that week rather than what's printed and unchanging.Dinner is served as a chef's-choice tasting format — 3, 4, or 5 courses — so you're not making decisions all night, just settling in. It's become a regular pick for first dates, anniversaries, birthdays, and the kind of evening people specifically ask us to make memorable.Dietary needs: We regularly accommodate vegan, vegetarian, and other dietary requirements — just note it in your reservation or send us a message ahead of time, and we'll build it into your menu that evening.
