Extraordinary experience at Georgie. I loved how there was a classic French throughline in each dish while embracing other cultures, flavors and textures that you might not expect. The Oaxacan Sunset cocktail was an exceptional start to the meal. So complex, savory and refreshing. The brioche on the snow crab toast was golden and buttery and was the perfect accent to the citrusy sweetness of the snow crab. The smokiness of the venison tartare was a delicious surprise and potato on which it sat was perfectly crispy on the outside and soft on the inside. The sake poached leeks were like butter and simply disappeared on the palate. They had Zind-Humbrecht Clos St Urbain Rangen de Thann Riesling that worked with everything but especially was a radiant contrast to the Alsatian-inspired sausages and coleslaw. The Halibut was classic French - silky creamy succulence without feeling too rich. The pork chop was incredibly tender and the mostarda and chickories such a thoughtful balance. The desserts showcased a tremendous equilibrium of sweet with savory. The young coconut sorbet - what seems so simple - is a brilliant amalgamation of different coconut flavors and seamless textures. Refreshing and utterly complex. Even if you don't have room for dessert, this is the one to get. The strawberry tartlettes utilize the strawberry in multiple ways. There is a surprisingly delicious fermented plum accent to balance the cream, and the shell itself is savory and delicate. The chocolate tart is a sheep in a wolf's clothing. It looks super dense and heavy but it's airy and fluffy and just dances on the palate. That prune ice cream though.

Nice hotel dining. Service was excellent. Staff went out of their way for us.

The food and atmosphere was amazing. I would absolutely recommend.
